ABOUT CHEF JESPER JONSSON

Chef Jesper Jonsson’s background and training make him a natural leader for the Edesia team of “celebrity chefs,” who will be demonstrating their culinary skills at Edesia in 2015. Before joining the Escoffier educator staff in Boulder, Jonsson was executive chef at Randolphs at Warwick Hotel in Denver. A native of Denmark, Jonsson trained in France at both Universite Paul Valery and Auguste Escoffier. With a solid background in French cuisine, he moved on to cook in Europe, New York and eventually Colorado for Danish diplomats, royalty, heads of state, captains of industry and a variety of film and sports celebrities. His guest lists have included such luminaries as Princesses Stephanie and Caroline of Monaco, Caroline Kennedy, Yoko Ono, Isabella Rossellini, Clint Eastwood, Roger Moore and Greg Norman, to name a few. He comes by his love for Colorado from having lived and worked on the Western Slope in and owned a popular restaurant in Meeker. Chef Jonsson has participated in Edesia for several years.

Edesia: A Palisade Culinary, Wine & Spirits Adventure returns to Wine Country Inn Sunday, March 29. A variety of local and regional food, wine, beer and spirits will be served inside and outside in a tented courtyard.

Tickets for the French-themed VIP Luncheon from 11 a.m. to 1 p.m. will be available through Friday, March 27, only. VIP tickets cost $125, including the main event. Off-site parking with horse-drawn carriage rides, live music, a magician, a silent auction, and more will be available to attendees.



Edesia is a fundraiser for Marillac Clinic, which provides health services to Mesa County residents without health insurance, with limited health insurance, or for those on Medicaid. From 2011 to 2014, Edesia raised $63,200 for Marillac operations locally.

According to Kristy Schmidt of Marillac, she would love to see funds raised exceed $20,000 in 2015.



“My taste buds will be going wild,” Kay Ramachandran, also of Marillac, said of Sunday’s party.

FOOD, DRINKS & FUN

Edesia’s VIP luncheon will be led by Chef Jesper Jonsson and feature a three-course meal based on the teachings of Auguste Escoffier.

Jay Christianson of Palisade’s Canyon Wind Cellars said a 2014 Chardonnay will be included in the luncheon.

According to Chef Graham Mitchell of Auguste Escoffier School of Culinary Arts in Boulder, Colo., he will attend Edesia with students to act as support for Jonsson. Mitchell will also provide a chef demonstration on how to make chicken liver mousse, and he will offer a tasting table with charcuterie.

Chef Josh Niernberg of Bin 707 Foodbar in Grand Junction will offer a demonstration featuring braised Tenderbelly pork belly. He will be joined by Griff Chiono and Andrew Watson of Bin 707 as well.

Mesa Park Vineyards of Palisade will pour a dry Riesling, plus a red blend of Cabernet Sauvignon and Petit Verdot — called Barn Owl Red, spokesperson Brooke Webb confirmed.

Kannah Creek Brewing Company will offer Broken Oar IPA and Vertical Drop Robust Red Ale along with food samples.

And Palisade Brewing Company will provide “pulled pork sliders, smoked wings and cucumber salad,” spokesperson Evan Linko said. “We will also be pouring the Soul Shakedown Imperial Red, Dirty Hippie, and the Porter of Love.”

Wine Country Inn’s Tapestry Lounge will additionally offer empanadas and a variety of house-made meatballs with accompanying sauces.

“There will be exceptional food and wines,” Schmidt said.

Next year’s Edesia will fall on Sunday, March 20, 2016.
