Fight the fat fight



Are you ready? You know what I mean … you've joined a weight loss program AGAIN and fallen off AGAIN, now you're ready to join AGAIN. I did that so many times I thought it was impossible to break the horrible yo-yo! But I was wrong. There can be one last time you start again! This can be it, not just another diet to try one more time.

That doesn't mean you have to “get it” all at once, go right to goal and live there in thin bliss forever (though that would be nice, wouldn't it?). What it does mean is that we don't stop working at it. Ever!

This is a lifetime of winning the little battles to finally win the war. And once it's done — we still keep fighting. I am still working at it myself even after losing 212 pounds. There are times when I get a sloppy with my program and, when I start to lose a little ground, I have to dig in my heals and say “ENOUGH!” I retrieve my ground and keep on fighting.

Does that sound discouraging? Do you every wonder, “If I have to fight this hard and hurt this much FOREVER, forget it! There's no way I want to live like that!” Take heart. It's not always like that.

When I'm on track, doing the little mental preparations (like having my morning devotions which really helps me), and making sure I'm prepared with my food (which keeps me on track), life is really very easy and I love how I'm eating. It's when I don't do what I need to do to be successful that the battle gets hard. I struggle and feel deprived and I ask myself, “Is it worth it?”

Then I pull out my worn index card of the reasons I wanted to lose weight in the first place. (Have you made one yet?) I remember what it felt like physically and emotionally being 350 pounds and I realize that the little battles here and there are worth the quality of life I now have.

Is it worth it? Absolutely!

Keep up the fight and remember … NOTHING TASTES AS GOOD AS THIN FEELS!

Here's one of my favorite summer recipes. So light you can enjoy it guilt-free, so delicious you can serve it to everyone!

Kim's New Potato Salad

1 3/4 lbs. new red potatoes

3/4 cup white parts of scallions, sliced

1/2 cup fresh dill, cut up

1/2 cup Smart Beat®* Mayo (or equivalent)

1/2 cup fat-free plain yogurt

1 tsp. salt

Leaving skins on, wash and cut potatoes into bite-size pieces. Boil potatoes until soft, NOT mushy. Drain and cool. In a medium sized bowl blend remaining ingredients and toss gently with cooled potatoes. Chill until ready to serve.

Yields 8 1/2 cup servings: 72 calories, 0 fat, 2 fiber per serving
